Flickr looks like a good destination for watching time-lapse videos.
Heather Champ recently uploaded a time-lapse movie shot at the Flickr office - those moving heads are Flickr employees. You can view some more time lapse videos on Flickr at this page.
To create time-lapse movies on your PC with a digital camera or webcam, you can try Webcam Timershot (for Windows XP), Perios (for Vista) or Gawker if you are on a Mac. The still image shots can then be combined using QuickTime Pro or Windows Movie Maker.
